BLUEBERRY COFFEE CAKE (US)
A yummy treat from Pat!
Ingredients:
2 cups flour
3/4 cup granulated sugar
2 tsp. baking powder
3/4 tsp. salt
3/4 cup milk
1 egg
2 cups blueberries (drained)
1/4 cup shortening
Directions:
Blend all ingredients except blueberries. Beat vigorously for 12 minutes.
Carefully stir in blueberries. Place in greased 9 inch cake pan.
Top with streusel topping. Bake 45 to 60 minutes at 375 degrees.
Streusel Topping
Mix together:
1/4 cup butter
1/2 cup flour
1/2 cup sugar
1 tsp. cinnamon
