PUMPKIN FLAN(ITALY)
Make something from yor pumpkin besides a Jack o'lantern! From Gio in Italy.

4 persons - 65 minutes of cooking

Ingredients:

1 pt. (1/2 lt.) milk
3 eggs
1 lemon rind
10 oz (300 g.) pulp of pumpkin
5 oz (150 g.) sugar
2 oz (60 g.) flour
a pinch of salt

Directions:

Cook the pulp of the pumpkin in very little water on a very low fire for 45 minutes.
Then mash it.
Pour in a bowl the flour with 3 whole eggs, sugar, milk, salt, and the grated lemon rind.
In the end add the mashed pumpkin. Butter a tall and narrow mould and cook in hot oven for 20 minutes.
