SIDE DISH

 

SMASHED POTATOS
Great with BBQ's, crunchy on the outside and mashed in the middle.
Everyone's favourite! From Caroline in New Zealand

Ingredients

One large potato per person (approx) Use good baking or mashing potatos
extra virgin olive oil
rock salt

Bake potatos in 200 degree oven for about an hour (until soft when squeezed)
Note: you can microwave them to this stage
Remove from oven and place on oven proof serving dish. Beat potaoes with a meat
tenderiser or potato masher until slightly flattened and skin starts to split.
Drizzle olive oil over the top and top with a good pinch of rock salt.
Sprinkle with fresh rosemary, thyme or your favourite herb if required.
Bake a further 15 minutes in 200 oven until crispy on the outside.
