Mom's Apple Muffins
Good for breakfast, lunch or a quick snack. My son's favorite!

Ingredients: 1 cup flour
1 cup quick-cooking or old-fashioned oatmeal
1/3 Cup Sugar
1 teaspoon Cinnamon
3 teaspoons baking powder
1 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla
1 egg
One large apple, peeled, cored and finely chopped (I use a food processor or blender)

You need: a muffin tin, well greased, or use paper muffin cups

Directions:

Preheat oven to 375 degrees F.
In a medium mixing bowl, combine all the dry ingredients.
In a large mixing bowl, beat the egg with a hand beater, then mix in the milk, oil and
vanilla. Add the dry ingredients, stirring with a spoon just until moist. Stir in the apple.
Spoon batter into muffin cups. Bake approximately 20-25 minutes, until the muffins are golden brown.

Makes 12 muffins.

Variations:

Use 1 cup blueberries or blackberries instead of the apple. Or use 1 cup unsweetened applesauce.
