SPIKED CHILLI MUSSELS WITH LEMONGRASS (NZ)
One of our summer favourites. Live mussels are incredibly cheap here at about $4.50 ($2.20US) for 40 or so-CarolineJ
Steam open fresh live mussels (up to 2 dozen) in 1 cup of reisling or other sweetish wine and 1 cup of fish (or chicken will do) stock. Remove from liquid. To liquid add, 1 minced spring onion(shallot), 1 teaspoon finely chopped root ginger, 1 to 2 teaspoons
of hot chilli sauce, 1 tablespoon minced lemongrass ( or 1 teaspoon lemon
zest) and simmer 2 to 3 minutes. Add Mussels back to pot to heat through,
(don't over cook!) toss in 2 tablespoons of fresh coriander and two tablespoons
lemon juice. Serve 6 to 8 mussels per serve with a little broth.
Have lots of crusty bread around to soak up the juices.YUM
