LEMON CRANBERRY LOAF (US)
Something good from Roseann!
1 pkg. (8 oz.) cream cheese, softened.
1 1/4 cups sugar
1 tsp. vanilla
2 tbsp lemon juice
1 tsp grated lemon peel
1 1/2 c. chopped cranberries ( I throw them in the blender or food processor
for a minute)
2 1/4 cups flour
2 tsp baking powder
1/2 tsp baking soda
Heat oven to 325 degrees. Grease & flour loaf pan, 9x5x3.
Beat cream cheese, margerine, sugar, and vanilla in large mixing bowl with
electric mixer on medium speed til well blended. Add eggs, one at a time,
mixing well after each addition. Stir in juice and peel. Toss cranberries
and combined dry ingredients in large bowl. Add cream cheese mixture, mixing
just until moistened. Pour into loaf pan. Bake 1 hour and 15 mins. or until
wooden pick in center comes out clean. Cool 5 mins., remove from pan. Cool
completely on wire rack. Makes one loaf.
