TURKEY WITH MLINCI ("PURICA S MLINCIMA")

350 g (13 oz.) flour
Prepare dough using flour and salted, lukewarm water, making it not too dry.
Divide dough into four parts and roll into flat, round, but not too thin disks.
Bake in preheated oven on an ungreased baking sheet.
Break the mlinci into a small pieces.
Clean the turkey.
Spread the salt all over inside and outside of the turkey.
Bake the turkey.
Baste the turkey as necessary, occasionally adding water. This will make the turkey
more tender and succulent.
When the turkey is done, add mlinci to lightly salted boiling water,
covering and immediately removing from burner.
Let sit for five to ten minutes.
Strain, transfer to baking dish and baste with turkey grease.
NOTE: Mlinci can be prepared several days in advance, stored in a dry place,
and then finished just before serving, making them an ideal side dish to prepare
for unexpected guests.
