MARTHA'S BONELESS BUFFALO CHICKEN TENDERS
For those who are wondering, chicken tenders are strips of breast meat.
1 lb. chicken tenders
3 eggs, whipped
about 1/2 cup corn starch
olive oil (extra virgin)
1/2 cup hot sauce
1 stick butter
Coat the tenders with eggs. Then coat tenders with corn starch. Put enough
olive oil in pan to cover bottom -- sautee the tenders until they are crispy.
Preheat oven to 350 degrees -- melt butter and hot sauce together and pour
over chicken tenders. I usually use an 8 x 11 1/2" shallow pan. Bake in
preheated oven for 30 minutes. I put on a platter with celery sticks and
bleu cheese dressing. Or for a great treat and easy light meal, cut cooked
tenders in bite sized pieces and mix with your choice of salad greens.
